Back To Basics - Day 1

A couple posts back I shared my issues with how I've been feeling lately. Ever since going gluten free and then vegan almost 3 years ago I have felt amazing... until now. Something has changed with my diet that is causing me issues and I'm not feeling as great as I know I can. So I've made it a goal to take a few days and go back to eating simple plant foods that I know make me feel great. It's my own way of trying to experiment with what makes me feel good and what causes digestion issues. 

Breakfast
I woke up and had a liter of lemon water. I start my morning off like this everyday. It hydrates me and wakes up my body. After that I had a green smoothie consisting of bananas, spinach, and coconut water. 

Snack
For a snack I had another banana smoothie. This time I just used bananas and soy milk.

Lunch
Lunch consisted of oatmeal topped with cinnamon, peanut butter, blueberries, and hemp seeds. I honestly planned on having some more fruit for lunch but my body was telling me to go with oatmeal instead. So I did!

Snack
I had two coconut date rolls for a simple afternoon snack.

Dinner
I wasn't sure what route to take for dinner. I finally decided on a simple meal that I've been having for the longest time. I had rice, a bit of salsa, black beans, and nutritional yeast. The salsa I use is mild and made with simple ingredients which gives everything a bit of flavor but is also easy for me to digest and leaves me feeling good.

That's all that I had for the day! Overall I felt good. I didn't feel any better or worse than I've been feeling. I'm going to count that as a good thing. I think that doing this experiment will allow me to really try to get in tune with my body and find out what foods work for me and which ones I need to try to avoid.
