Well, you guys, it's that time of year. Fall is basically here and even though I am not happy about it (I'm more into 90 degree temps and sunshine) there is one thing I'm excited for and that's the food. Oh yeah, fall foods. I have a whole list of recipes that I want to create within the next few months and I am excited about them all! Trying to get myself together and be productive. Woo.

But really, making stuff in the fall and winter is so much easier because I basically have to stay in the house. In the summer I like to spend every possible moment outside and feel bad whenever I'm inside making recipes. So there's another positive of the weather change!

I had no plans to make this recipe. It kind of just happened and I went with it. It's super sweet and is the best whenever it's warmed up. Maybe you'll just devour it straight out of the oven like I did but if you don't, then definitely heat it up beforehand!

Goji Berry Buckwheat Bake

serves 2

1 1/4 cup dates
2 tablespoons water
1/4 cup buckwheat
1/4 cup oats
2 tablespoons goji berries
1 tablespoon maple syrup

Preheat oven to 400 degrees. Blend together dates and water until a paste forms. Remove from blender and place in a medium sized bowl. Add in remaining ingredients and stir. Place mixture on a parchment paper lined cookie sheet and bake for 10-15 minutes. Remove from oven. Serve, enjoy!
