Valentine's Day Rice Crispy Treats

I was going to say that I'm not really into Valentine's Day. But it's a day where chocolate and candies are expected to happen so I think that I'm pretty into Valentine's Day after all.

I've also been thinking about the holiday and how to celebrate it other than by making some treats.

I know exactly what I want to do. Spread more love. Not just to those close to me, but to anyone I can. Maybe it'll just be in subtle ways like holding a door, making these treats for someone, or paying for their coffee. I'm a huge believer in small things though. Small gestures can make big impacts. So that's the plan for Valentine's Day and, let's be real, every other day too. It's the thought, attention, and actions that make things happen. I'm hoping that Valentine's Day sparks a lot of other people to spread a bit more love into the world too. It's so important.

But anyways, back to the recipe! This is a recipe you can make in under 10 minutes and then you can eat it all in probably less time than that. Naturally flavored with beet juice. But don't worry, no taste of the beets in these yummy treats! Soft and extra marshmallowy, you know that you can't resist. Make a batch for yourself because you deserve it or share 'em with those special people in your life. Yum!

VALENTINE'S DAY RICE CRIPSY TREATS

1 bag vegan marshmallows
1 tablespoon beet powder, I used this
Vanilla
5 1/2 cups rice crispy's
Chocolate
Goji berries
Hemp seeds

In a microwave safe bowl add marshmallows. Heat in 30 second intervals for 90 seconds. Remove from microwave and stir in beet powder and vanilla. Once mixed together add in rice crispy's. Press out on parchment paper and let sit until cool. Once cool, using a heart shaped cookie cutter press into rice crispy treats, repeating until complete. Top with melted chocolate drizzle, goji berries, and hemp seeds. Serve, enjoy!
