Vegan Cheesy Cucumber Bites

The other day my dad went to the store and picked up a big pack of cucumbers. He thought that they were zucchini and bought them for my mom because she loves them. But they tricked him and we were stuck with a big package of cucumbers. I'm not a big fan of vegetables, as I'm sure you already know. I've only mentioned it in like every post I make. Whoops! But I didn't want to waste this beautiful food! So I've been tossing them into my smoothies, salads, and rice bowls. But today I wanted to try something new.

It was so nice out today! It felt like a summer day and I was painting my back porch with my mom when I thought of making these as a way to cool off and refuel. These little guys are addictive. You'll find yourself popping 6 or 7 into your mouth without even realizing it. But that's totally okay. Eat the whole thing of it. It's all made out of real foods and will make you as cool as a cucumber!

Cheesy Cucumber Bites

makes 12-14 bites

1 cup almonds
1/4 cup cashews
3 tablespoon fresh lemon juice
1 clove garlic, minced
1 teaspoon nutritional yeast
Pinch of salt

1 medium/large cucumber
1 small tomato, diced
Cayenne Pepper

Soak the almonds and cashews for 1-3 hours. Combine everything except the cucumber and tomatoes in your blender or food processor. Blend together until creamy. If you want a thinner cheese, add more water. Once you get the consistency that you'd like remove from blender and set aside. Slice cucumber into pieces about an inch thick and lay out on a tray. Scoop a spoonful of cheese onto cucumbers and top with tomatoes and cayenne pepper. Serve, enjoy!
