Breakfast Ideas - August 2013

I love breakfast more than most things that occur in my days. I go to bed earlier than I plan on some nights just so that breakfast will come quicker. Seriously. That happens. How can some people not like breakfast?! That is one thing in life that I might not ever understand. I decided that I'd share with you some of the best (well most photogenic) breakfasts (all vegan and gluten free!!) from this past month. I know there are still 2 days in August and they both have great potential for delicious breakfast's, but I'm excited for this post. So I didn't want to wait any longer :D

I'll give you a fair warning, you'll be seeing more oatmeal than anything. But hey, quick, easy, and it's my favorite so what else would you expect?!

Okay, here we go.

Smoothies

Smoothies are great for August for so many reasons. What is better than waking up during the dog days of summer, throwing a bunch of yummy fruits and veggies into the blender, and starting your day off chilled off and full of energy? Not much, I can tell you that.

And of course when it's really scorching out and you feel like you're in Jamaica but you look out the window to green grass instead of sandy beaches, you can always make the best of that situation! Which is why I say, "The best smoothies are served in a fresh pineapple."

And I only speak the truth ;)

Watermelon Pineapple Smoothie

1 cup watermelon
1 cup pineapple
1/2 cup almond milk
2 cups ice
1 empty pineapple

Blend together all ingredients except the empty pineapple, of course. Pour into pineapple. Stick one of those little umbrellas into your drink (optional) Enjoy!!

Pancakes

Pancakes are great. I enjoy them on special occasions or weekends when I don't feel rushed making them. I like to give them the love they deserve :)

My pancakes are gluten free, vegan, and delicious. Sadly, I won't be sharing the recipe at this moment. Someday though, someday!

But I'll share with you the toppings I've included on both of the pictures above. Lets face it, that's the next best thing :)

Pancake Topping Ideas

First picture: Pineapple, agave, peanut butter, crushed almonds, and fresh pomegranate.

Second picture: Agave, peanut butter, chia seeds, cinnamon, blueberries, pomegranate, grapes, pineapple, and watermelon.

The topping ideas are truly endless. You can add anything you see in your fridge to your pancakes and they will be nutritious and delicious! (Even if they're not that nutritious, hello chocolate, as long as they're delicious; that's what counts on pancake day.)

Oatmeal

Ah, the beloved oatmeal. The breakfast of all breakfast's. The versatile and beneficial food to start off your morning.

Mmmm.

I use Bob's Gluten Free Oats

There's not really a recipe for my oatmeal. Just topping ideas cause anyone and everyone is able to make a bowl of the beloved breakfast food.

Morning Favorite Oatmeal

Agave, chia seeds, crushed almonds, blueberries, dried pineapple, ground flax.

Summer Sunrise Oatmeal

Homemade granola, dried apricots, fresh strawberries, and peanut butter.

Fig Frenzy Oatmeal

Fresh figs, chia seeds, ground flax, peanuts, and peanut butter.

This was my first breakfast with figs. Very exciting thing for me!

Morning Favorite Oatmeal Part 2

Pineapple, crushed almonds, blueberries, buckwheat groats, chia seeds, peanut butter. These are my favorite toppings and you'll see a lot of them!

Pre-Fall Oatmeal

Apples, almonds, peanuts, and cinnamon.

I made this on the first day of school. I'm not in school, obviously, but I associate school with the start of fall and this is the result!

These are just some of the yummy breakfast's that I've had over this past month. I love sharing photos with you guys, but I don't want to bore you with single posts of "oatmeal toppings from today" or "this is what I put on my pancakes this week." Maybe I'll start making this a monthly thing? We'll see what September brings!
